Banana Bread

Really moist, banana-y bread. Great with peanut butter on top.

Makes 2 loaves.

3 ½ c. white flour
3 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
2 c. mashed bananas (4-6 bananas)
2 Tbsp. lemon juice
¾ c. shortening
1 ½ c. sugar
3 eggs
¾ c. milk
½ c. chopped walnuts (optional)
¾ - 1 c. chocolate chips (optional)

Sift dry ingredients. Mash bananas and add lemon juice; mix. Cream shortening and sugar. Add eggs and beat 4 minutes total. Add sifted ingredients alternately with milk. Beat after each addition. Fold in bananas and nuts or chocolate chips (if desired). Pour into 2 greased loaf pans.
Bake at 350º F. for 1 hour. Cool on racks for 10 minutes. Remove and cool on wire racks before slicing.
